Chosen for its balance and approachability, this coffee appeals to both black coffee drinkers and those who prefer milk and sugar. Tasting notes include milk chocolate, nougat, and sweet plum and raisin.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eThis partnership with Village is about more than just great coffee; it’s about building community and sustainability.  The coffee comes from members of Café Colis Resistencia, who have been organizing a protest against the Canadian-owned Escobal silver mine. The mine was constructed without the consent or approval of the Indigenous Xinka people who inhabit the land. Each farmer contributing to this lot has been involved in this effort, seeking a fair market for their coffee and advocating for a more equitable price for their work.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eCherries are picked at peak ripeness and fermented in sealed bags for 48 hours. Growing up, the brothers were surrounded by coffee, both their parents worked as pickers on nearby farms. It was always Sebastian’s dream to have his own farm, where he could build a future for his family. His journey began in elementary school, when he alternated between picking coffee and attending school. After years of working as a picker, he and his brother were able to purchase land and begin growing coffee. In 2019 they decided to plant Pink Bourbon. After a few years of challenges and working off-farm to manage debts, Sebastian was introduced to Monkaaba, who helped connect his coffee to international markets.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eCherries are picked at peak ripeness every 15 days and floated before being left to ferment in a wooden hopper for 24 hours. The cherries are then depulped and left to dry ferment for 26 hours. The seeds are washed and left to drain for 12 hours before being moved to raised drying beds. This coffee represents an effort to purchase larger volumes as well as a wider range of quality from this region with the goal of increasing quality long term. In this lot we have coffee from Carmen Montayo \u0026amp; Albeiro Ramirez as well as many younger producers like Daniel \u0026amp; Natalia Hernandez \u0026amp; Delvis Machado. \u003c\/span\u003e\u003cspan\u003e\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eCherries are harvested at peak ripeness and are then depulped. After being depulped the coffee undergoes a 38-hour dry fermentation. We are tasting blackberry, cranberry, amber honey and lemonade. This is probably our favorite Kenyan of the year.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eWhile most of the coffees we purchase from Kenya come through cooperative washing stations, this is one of the few single-estate lots we’ve worked with from the country. Morris operates his own wet mill at Kivanga, giving him control over processing from cherry through to drying. Alongside Kamavindi Coffee Lab, he continues to refine the work at the estate and improve quality year over year. We are particularly evicted about the separation of only SL varieties. \u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eCherries are picked at peak ripeness and floated to remove defects. The ripe cherries are then depulped, density sorted, and left to ferment in open tanks. Following fermentation the seeds are thoroughly rinsed to remove all mucilage.
